Patrick Piuze has taken Chablis by storm over the past decade. While most vintners make one blended cuvée from mixed sites for their villages wine, Patrick obsessively crafts no fewer than EIGHT different villages-level wines. 90% of Chablis is machine-harvested; Piuze harvests everything by hand, a paramount factor in the quality of his wines. Most cellars use a pneumatic press; he uses a vertical one because he likes the initial blast of oxygen in hopes of preventing pre-mox, (a way of thinking also espoused by Jean-Marc Roulot.) Chichée is on a plateau near the 1er Cru Vaucoupin vineyard, vinified and aged in tank. Piuze states: ‘...the only thing truly original in the world of wine is the underlying terroir and I have nothing else interesting to add.’ SWOON.

Grab your front row seat to quality smashing headfirst into value. Fichet’s work is a direct outgrowth of René Lafon’s decision to bottle his Meursault ‘Clos de la Barre’ on its own. For a century before, such a thing had been unheard of; only the famous 1er cru were ever bottled individually; everything else was blended into Meursault villages. The vineyard location where he sources his Bourgogne Blanc is very special; this is one of the few places in Burgundy where 1er vines abut a Bourgogne Blanc vineyard.

When the appellation of Saumur-Champigny was established in 1957, Château de Brézé refused inclusion into this red wine appellation, claiming their historical vineyards were the best in the area for Chenin Blanc, and that they should have their own AOC, Brézé. They were denied, and the vineyards remained in purgatory of Saumur. However, most vignerons today would agree the vineyards of Brézé are the best vineyards in Saumur! Medium bodied, mouth-watering, bone dry Chenin Blanc.

Since 2016, Damien has produced a single-vineyard wine from a part of Montlouis he considers well-suited for complex, age-worthy, still dry chenin. If you like the densest expression of Chinon or Saumur Blanc, you will enjoy this cuvée. Josh had this wine at Racines (Thanks Pasca!) for the first time a while back. To put it mildly, he flipped out. The next day called the importer (thanks Jenny!) gathered a few like minds, and arranged the purchase all that remained of this wine at the winery.

Founded in 1691, biodynamic since 1997. Clos Liebenberg is a monopole and highest terroir of the winery, (with a breathtaking view of the alsatian plain and Swiss Alps) at @380 meters high. A flock of sheep wander around the Clos during winter; Sésame, their horse, helps us to plow during the season; bee hives are installed during the spring and summer; birdhouses and bat-houses have been installed to defend against pests and bugs. Clos Liebenberg’s wines have tension and elegance, typical of cool sandstone terroirs.

Souhaut produces his wines entirely from whole grape bunches and semi-carbonic maceration, leading to balanced and elegant final wines.

Chateau Yvonne has been surrounded by vineyards since the middle ages. Today the domaine is one of the best producers in Saumur, composed of 3 hectares of Chenin Blanc and 8 hectares of Cabernet Franc. The vineyards have been farmed organically (Ecocert certified) since 1997 and biodynamically since 2012. Fermented and aged in barrels of varying sizes, this wine combines the freshness and accessibility of Saumur Champigny with the skill of one of the valley’s most ambitious producers.

Balthazar took over from his father, René, in 2003. Franck has been working the domaine's 4.5 hectares organically since 2010, including a parcel of century-old vines in Chaillot he acquired from his uncle, Noël Verset. All the wines are made with indigenous yeasts and whole clusters, matured in old demi-muids for 18 months without racking. While Franck makes some of the most sought after and tasty wines from Cornas, his 'humble' Cotes du Rhone is sure to be one of the finest examples of wine bearing that moniker you will ever find.

‘Trinch’, from one of Loire Valley’s reference point growers (named after a German expression meaning ‘cheers!’) is a Cabernet Franc from younger vines. Vinified in stainless steel and made with the goal of a lighter body, freshness of flavor and spirit, ‘Trinch’ is meant for youthful, uncomplicated consumption. Bottled the Spring after harvest.

5505 | 2018 Domaine Sang des Cailloux Vacqueyras | Rhone
This domaine’s name means ‘the blood of the stones,’ and the wines reflect similar intensity. In 1990, the same year Serge Férigoule launched Le Sang des Cailloux. Vacqueyras was awarded an A.O.C.; a timely twist of fate that helped these wines become as celebrated as they deserve. That Serge has been farming organically for years but has never sought certification says something about his philosophy. He is not looking to impress; only to make the best wines he possibly can. His wines have everything we love about the Southern Rhône and deep Grenache driven wines – wild and chewy with notes of leather, spice, and smoky, black fruit. A delicious wine on any day, but a real bull’s eye during the chilly days of winter.

‘Cornaline’ is a blend of 50% Grenache, 30% Syrah & 20% Cabernet Sauvignon. Nestled amongst the foothills of Provence not far from where Van Gogh painted ‘Starry Night’, is Domaine Hauvette. In the early 1980s Dominique Hauvette, seeking more sunshine, left her job as a lawyer in the Savoie, re-discovered her passion for raising horses, and began studying oenology. Thirty-some years later, Dominique has 17 hectares of vines and an international reputation for making benchmark, stable, natural wines. Dominique’s conversion to biodynamics starting in 2000 added rigor to her intuitive organic practices, and coupled with her magical terroir, has found an exciting recipe for success.

5108 | 2017 Thierry Germain Saumur Champigny ‘Francs de Pied’ | Loire
Thierry relocated to the Loire from Bordeaux in the early 1990s, and soon converted the entire domaine to biodynamic viticulture, which was the equivalent of his wine epiphany. In the decade or so since, Germain’s wines have dramatically shot up in quality. Catapulting Roches Neuves to its current status as an elite Loire Valley address. There’s always something special about ungrafted vines; the unique wine is made from French rootstock Cabernet Franc from a sandy limestone parcel in Saumur. 100% whole cluster fermentation followed by 12 month in large foudre.

5566 | 2018 Domaine Champet | Cote Rotie ‘La Viailliere’
In recent years, the world has become much more aware of what makes great wine, and few places on Earth have benefited more than Côte Rôtie—one of the most noble terroirs of all. The family’s vines are all in the great La Viallière lieu-dit. They still vinify with typically 100% wholeclusters, fermenting and macerating with the native yeasts for two to three weeks with frequent pumping over. The 18-month elévage takes place almost entirely in neutral barrels—primarily large demi-muids augmented by a substantial number of foudres and a handful of pieces. Bottling is without fining or filtration.

5369 | 2015 Chateau Montrose 'Dame de Montrose' | Bordeaux
The 2015 La Dame de Montrose is a blend of 55% Cabernet Sauvignon, 41% Merlot and 4% Petit Verdot that was picked between 15 September and 8 October. The palate is well balanced with a more sumptuous texture compared to its fellow Saint Estèphes, thanks to that lush Merlot that forms the core of this wine. At five years young this wine is really beginning to open up and sing!

An especially strong D’Armailhac from a superb vintage, and a gem in the Rothschild stable. An overachieving fifth growth founded in the 1700’s and purchased by Mouton Rothschild in the 1930’s, D’Armailhac is a deft blend of @ 60%Cabernet Sauvignon, 25% Merlot, and 15% Cabernet Franc; a true Bordeaux blend which takes the best from all three varietals into a touchstone wine.

Guillaume and Aude Lavollée represent the fourth generation of vignerons at Génot-Boulanger, producing a broad range of wines exclusively from estate-owned vineyards (from over 30 appellations!) Since 2008, Guillaume and Aude have worked to improve the quality of their wines, converting to organic farming practices and experimenting with biodynamics. Their philosophy is ‘maximum work in the vineyards for minimum intervention in the cuverie,’ which has translated to wines that are first and foremost true to their terroir. This Chambolle is fresh, bright and full of balance & tension.

Amiot-Servelle's history begins with the establishment of the domain in Chambolle in 1920. In 2003, (as the vineyards had essentially been farmed organically for decades) Christian decided to go 100% organic. Today, Amiot-Servelle remains the only certified organic producer in the village. The wines are pure and bright; 2015 will go down as one of the best vintages for reds in the Cote over the past 20 years.

5221 | 2015 Domaine de Chevalier | Pessac Leognan
One of our favorite and most consistent Chateau in all of Bordeaux. We find tremendous value in the wines from the southern reaches of Pessac Leognan (a small, quality minded appellation carved out of the greater Graves region in 1987) and this is one of the best. The 2015 is a blend 65% Cabernet Sauvignon, 30% Merlot and 5% Petit Verdot, entering a prime drinking window with a view towards a long and bright future.
